Jerk Chicken Recipe

If you’re looking for an exciting explosion of taste in your mouth then you should try out this Jamaican classic. Paired up with rice and beans, this fiery feast smothered on your chicken will be sure to have your mouth doing a Caribbean calypso. Once you’re comfortable with the recipe, you can adapt it and get a little more adventurous by adding Jamaican classics like Scotch bonnet peppers. The basis of jerk seasoning comes from the allspice or pimento as it’s called in Jamaica.

What you’ll need

For serving up to 6 people:

¼ cup oil

2 cloves of garlic, crushed

½ onion, finely diced

2 teaspoons of creole spice

2 cups long grain rice

1 teaspoon dried thyme

1 ½ cups coconut milk

15oz can red kidney beans

Fresh ground pepper and salt to taste

2-3 cups chicken broth

1 teaspoon paprika (smoked)

6 chicken thighs

2 tablespoons jerk sauce


Season your chicken thighs with salt and rub all over with the blended spices. Cook the chicken in a pan or skillet, skin side up for about 3 minutes but do not burn. Put to one side and preheat the oven to 350 degrees Fahrenheit.

Place the rice in a bowl, cover with water and wash. Drain the water and do this 2 or 3 times until the water runs clear.

Add 2 tablespoons of oil to the pan and continue to saute the onion, garlic and thyme for about 3 minutes and then add the rice and drained kidney beans.

Now add all the ingredients to the pan and the chicken and bring to the boil. Next, place the ingredients into an ovenproof dish and cook for 30 minutes or until the chicken is cooked thoroughly. Remove, allow to cool and serve. For more chicken recipes, go to

The great thing about this dish is that’s simple, quick to prepare and can be on the dinner table in under one hour. Perfect for when the hungry tribe descend after school or work. You may even want to dabble with a homemade jerk sauce and if so, here is what you need:

2 tablespoons onion powder

2 tablespoons garlic powder

1 tablespoon dried thyme

1 tablespoon ground ginger

1 teaspoon ground white pepper

1 tablespoon ground all-spice

1 tablespoon paprika

½ tablespoon nutmeg

3 tablespoons brown sugar

1 tablespoon chili powder (lessen or increase to suit taste)


All you need to do is combine the ingredients in a bowl or jar and mix thoroughly. Store the spice in an airtight container and you’re good to go whenever you fancy cooking up some delicious jerk chicken!
