Italian Sausage Soup

What youll need

1 cup onion, chopped

1 pound sweet Italian sausage

cup water

2 garlic cloves, chopped

5 cups beef broth

cup red wine

1 cup carrot, thinly sliced

4 large tomatoes

8oz can tomato sauce

teaspoon dried oregano

tablespoon fresh basil leaves

8oz tortellini pasta

1 cups zucchini, sliced

3 tablespoons fresh parsley, chopped


Youll need a 5-quart Dutch oven for this recipe.

In the Dutch oven, cook the sausage until nicely browned. Take out the sausage and drain, keeping 1 tablespoon of the juice to one side.

In the juice, saute the garlic and onions. Add in the beef broth, tomatoes, wine, water, carrots, basil, oregano, sausage and tomato sauce. Bring to the boil and then reduce the heat to a simmer. Simmer for 30 minutes without a lid.

Stir in the slices of zucchini and the parsley. Simmer again for another 30 minutes with the cover on this time.

During the last 10 minutes of cooking time, pour in the tortellini and recover.

When time is up, serve into individual bowls and garnish with parmesan cheese to taste. Buon Appetito!

What youll need

1 clove garlic, mashed

2 tablespoons mayonnaise


teaspoon dried oregano

2 tablespoons red wine vinegar

Ground black pepper

cup plus 2 tablespoons extra virgin olive oil

1 small head of radicchio, halved and chopped

1 large romaine heart, chopped

head of iceberg lettuce, chopped

small red onion

cup cherry tomatoes

8 pepperoncini

cup pitted green olives

2oz Parmigiano-Reggiano cheese


Mash up the garlic in a large mixing bowl and add a dash of salt. Using a whisk, mix in the mayonnaise, oregano and vinegar. Then whisk in the olive oil.

Add a dash of pepper and then add in all the remaining ingredients to the bowl.

Give the bowl a vigorous toss to combine and coat all the ingredients and serve immediately alongside your sausage and pasta soup.
