Russian Kolbasa Sausage

This sausage is a mainstay of Russian cuisine and can be made in a million different ways with the addition of different spices and seasonings. Its time to make this sausage your own and create some love for Mother Russia in your kitchen.

Kolbasa Sausage

What youll need

2 large onions, chopped

5 pounds coarse ground pork

1 tablespoons garlic, crushed

1 bunch fresh parsley

1 tablespoon dill seeds

1 tablespoon ground black pepper

2 cups water

1 heaped tablespoon salt

3 tablespoons caraway seeds

Packet of hog-casings


Take a large bowl and combine all the ingredients. Make sure you hand mix for quite a while so all the ingredients blend together. Allow it to rest overnight to really infuse all those wonderful flavors.

Next day, mix again and pass through a meat grinder. As it comes out of the meat grinder, push it into the hog casings.

The perfect combination is serving up kolbasa with a creamy Russian potato salad. This is a simple recipe with prep time of 25 minutes and a cook time of only 25 minutes too. Make sure you finely chop all the ingredients and dress beautifully in mayonnaise and your family will be begging you for more!

What youll need

5 large potatoes

5 eggs

16oz packet of turkey hot dogs

Green onions, chopped

5 dill pickles

15oz can baby peas


1 cup mayonnaise


Put the potatoes into a large pan and cover with cold water. Bring to the boil and cook the potatoes until you can easily dig a fork into them. This should take around 20 minutes.

While the potatoes are in the last 10 minutes of boiling, add in the hot dogs and the eggs to enable them to boil for 10 minutes as well.

Drain the potatoes and allow to rest for a few minutes.

Now peel them and cut them into cubes. Chop up the hot dogs.

Put all ingredients into a big mixing bowl and place in the pickles, green onions and peas.

The eggs will need to be peeled and then grated them over the top of the potato salad.

Season with salt and add the mayonnaise. Give it a good stir and serve in individual bowls alongside your kolbasa.
