What you’ll need
2 pounds tomatoes
8oz angel hair pasta
1 tablespoon olive oil
4 garlic cloves, crushed
1 tablespoon tomato paste
1 tablespoon fresh basil, chopped
Ground black pepper
¼ cup Parmesan cheese
Put the tomatoes into a kettle, cover with cold water and bring just to the boil. Discard the water and cover the tomatoes again in cold water. Now peel them and then cut them into pieces.
Take a large pan and fill with water, add some salt and pour in the pasta. Bring to the boil and continue cooking until pasta is soft but still slightly ‘al dente’.
Take a large skillet and cook the garlic in some olive oil. Cook until the garlic turns opaque but not brown. Add in the tomato paste and stir before adding a dash of salt and pepper.
Reduce the heat and leave the pasta to simmer until it is ready. Add the basil.
Drain the pasta through a colander and pour into the skillet with the sauce. Add two tablespoons of olive oil and toss into the pasta. Keep the heat as low as possible while mixing the pasta with thee sauce.
Leave it uncovered but warm for 10 minutes and then it’s ready to serve. Scoop into serving bowls and garnish with Parmesan cheese.

1 stick of butter, melted
1 French baguette about 20 inches
5 garlic cloves, minced
1-2 teaspoons fresh parsley, chopped
1 cup cheese, shredded (Parmesan and Mozzarella work well)
Preheat the oven to 400 degrees F and slice the baguette lengthwise to give you two big, long pieces to begin with.
Melt some butter and then stir in the parsley and garlic to the butter.
Get a spatula and spread the garlic butter over the bread. Put the two halves of bread back together and wrap in foil.
Bake in the oven for 15 minutes. Take the bread from the oven, unwrap and open up the two halves. Load with shredded cheese and leave the bread open from this point.
For crispy bread, broil for 3 minutes until the cheese melts. If you prefer softer bread then return to the oven for 5 minutes on 400 degrees F until the cheese melts.
