What you’ll need

2 tablespoons butter, unsalted

1 medium onion

3 garlic cloves, crushed

4 cups whole milk

2 ½ pounds baking potatoes

1 teaspoon Dijon mustard

¾ cup heavy cream

1 ½ cups cheddar cheese, grated

Salt

Ground black pepper

Method

Preheat the oven to 375 degrees F. Grease a medium baking dish.

Take a Dutch oven and melt the butter over a medium heat. Place the onions in the oven and fry until soft, which should take about 5 minutes.

Add in the milk, Dijon mustard and garlic and bring to the boil. Season generously with salt and pepper.

Slice up the potatoes thinly but don’t rinse the potatoes. Mix the potatoes in with the milk and simmer for only about 10 minutes until they are nearly soft but still have some resistance when poked with a knife.

Move half of the potatoes and onions to the baking dish. Liberally apply salt and pepper and add – cup of cheddar cheese onto the top.

Spread the remaining potatoes over the top, season some more and add the remaining cheese. Pour over the cream, topping the potatoes and cheese.

Pop the baking dish into the oven for about 1 hour until beautifully golden and crisp. Allow to stand for 10 minutes before serving up with your gorgeous baked ham.
